3 cups fresh kale
1/2 red onion - sliced
1/4 cup slivered almonds - toasted
1/4 cups parmesan cheese
1/8 to 1/4 cup of olive oil
salt and pepper to taste
This salad is very easy and perfect for super hot days like today. All I did was toast the almonds in a pan for a few minutes just until you can smell their nutty flavor. Then I added all the ingredients in a bowl and added just enough oil to lightly coat the kale and mixed the salad for a few minutes so the kale would break down a little and become softer and more palatable.
I know that the idea of uncooked kale doesn't seem appealing to most, and I didn't think it would be very good either, but after making it and trying it I think that sometimes it can be good as long as it's flavored in the right way. I am hoping that it will get a little less humid so that I can do a little more cooking in the next few days, because between work and the heat I haven't been able to make a full meal in a while.
